Winter is starting to approach, and it is now time for hearty meals. What better food is there to create a hearty meal than a piece of steak. For this recipe, I opted for filet mignon. Although some people dislike filet due to its lack of marbling, cooking it the way I’m about to show you will ensure a perfect medium rare, flavorful, and juicy steak. In addition, the compound butter is only going to elevate the meaty and savory steak, and make you come back for more.
Why This Recipe Works:
Filet Mignon: Filet is a very tender piece of meat, and it is difficult to overcook it and make it chewy. In addition, the downside of it lacking inter muscular fat also has a benefit. Without a strong beefy flavor, it can pick up outside flavors very well such as garlic and herbs.
Neutral Oil: Neutral oils are necessary for this recipe due to high smoking points. When cooking the steak, the pan must be preheated to a high temperature in order to get the sear that we want. If we use a fat such as butter or olive oil, it would burn and give our steak a bitter flavor.
Butter: We will use this as a topping for the steak after it is done cooking. This butter will give the steak a great rich flavor, and you can mix almost anything into this butter to enhance its flavoring. For this recipe, we will be using garlic and dried herbs.
Why These Ingredients:
When using these ingredients, we are maximizing the flavor of the steak we are cooking. It all starts with the oil, as a neutral oil like avocado or vegetable will allow us to get the pan hot. This high temperature will allow us to develop a great sear on the steak, and prevent any overcooking. Finally, the compound butter we are using to finish will add a complex new flavor to the mix.
Recipe:
Servings: 2-4
Cook Time: 7-15 minutes
Resting Time: 15 minutes
Total Time: Around 30 minutes
2 filets
2 tbsp of a high smoke point neutral oil
4 tbsp butter softened
1 tsp garlic powder (add more if you want)
Salt, pepper, dried basil, and oregano to taste
Instructions:
Preheat oven to 350 degrees
Add butter and seasoning into a bowl. Mix well then store in the fridge until time to use.
After oven done preheating, place a oven safe pan onto the stove. Turn the heat to high, and let the pan get hot. Add in the oil and wait for it to glisten.
Add the steaks to the pan and flip every 30 seconds for 4-5 minutes. Once done, transfer to the oven for 2-7 minutes, or until your preferred doneness.
Add the finished steaks to a plate and add the desired amount of compound butter. Let rest for 15 minutes before serving.
