Miso & Tahini Roasted Cabbage

For the past few weeks, I have been on a cabbage kick. Cabbage salads, sauteed cabbage, everything. So, I decided I wanted to try something new. I had recently seen roasted cabbage wedges on my Instagram for you page, and I knew I had to make it. After thinking for a bit, I had somewhat of a recipe in my head. A few trial tests later, I present to you, miso and tahini roasted cabbage wedges.


The recipe is simple, cheap, and delicious. This covers the big three of homemade food. The outside of the cabbage develops a beautiful char, which adds a caramelized flavor to the dish. The inner layers also get so soft and creamy that they basically melt in your mouth. But, most importantly is the sauce. Its bright yet rich, and has a sweetness that compliments the rest of the dish. The miso also adds a complex flavor that is impossible to describe. In addition, the dish looks so elegant once plated. So, without further ado, the recipe is down below.


Recipe:

Serves 6

Prep Time: 5 minutes

Cook Time: 30 minutes

Total Time: 35 minutes


Ingredients:

  • 1 small head green cabbage (cut into wedges)

  • 3 tsp salt

  • 1 tbsp vegetable or avocado oil

  • 2 tbsp tahini

  • 2 tbsp miso (preferably white)

  • 2 tsp honey

  • 1/2 tbsp rice vinegar

  • black pepper to taste

Instructions:

  1. Preheat oven to 400 degrees Fahrenheit (200 C).

  2. Cut your cabbage in half and remove most of the core from both sides. Cut each half into three wedges. Use 1/2 tsp salt on each wedge.

  3. Turn your stove top to high heat and place on a large oven safe pan. Once the pan is hot, add your oil and let the oil get hot. Add the cabbage (in batches if needed) and sear on medium high heat for 3-4 minutes a side. Once finished, add all wedges into the pan.

  4. Place the pan with the wedges into the oven and let it cook for 10 minutes. While waiting, mix together the tahini, miso, honey, and vinegar. Once 10 minutes is up, brush the sauce evenly on each wedge. Adjust the cabbage so that the unseared side is directly touching the pan. Place the cabbage back in the oven for 5 minutes.

  5. Remove from oven and serve.
