Easy Strawberry Pie

A few months back, I saw frozen pie dough on sale, so I decided to give it a try. But for months, the dough sat in the freezer until this week. With too many strawberries to consume raw, I decided to make a strawberry pie. Now, the recipe is super easy. The hardest thing is waiting for the pie to finish baking. The slightly tart strawberries cuts through the sweetness, and the lemon zest adds a great background taste. In addition, the pie dough is surprisingly good and crisps up nicely. But, the secret ingredient is a knob of butter in the filling which adds a creaminess and rich taste to the entire dessert. So, enough talking, lets get to baking.



Strawberry Pie Recipe:

Makes 8 Servings

Prep Time: 15 minutes

Cook Time: 45 minutes

Cool Time: 2 hours

Total Time: 3 hours

Ingredients:

  • 1 Pillsbury pie crust

  • 1 pound strawberries

  • 1 tbsp lemon zest

  • 3/4 cup water

  • 4 tbsp butter

  • 1/4 cup sugar

  • 1/4 tsp salt

  • 1 tbsp cornstarch mixed with 1/4 cup water

Instructions:

  1. Clean your strawberries and remove the stem. Cut them into small chunks. In a large saucepan over medium high heat, add the strawberries and butter. Once the butter is melted and bubbling, add in the water, lemon zest, sugar, and salt. Bring the filling to a gentle simmer.

  2. Once simmering, add in the cornstarch slurry and mix constantly. Once the mixture starts producing large bubbles and thickens, take off the heat and transfer to a container. Let the filling cool completely.

  3. Once filling is cooled, preheat the oven to 450 degrees Fahrenheit. While preheating, unroll the pie dough and place it into a nine inch pie pan or cast iron skillet. Add baking beans on top of the crust and place it into the oven for 11 minutes.

  4. Add the now cool filling and place back into the oven. Reduce temperature to 375 degrees Fahrenheit. Let the pie bake for 35-40 minutes. If the crust starts to darken too much, add foil wrap on top of the dish.

  5. Once finished baking, let the pie cool down for 30 minutes. Serve and enjoy. *Optionally place pie into the freezer overnight. This makes cutting slices easier. Just add frozen slice to oven or air fryer at 375 degrees for ten minutes.
