Clean Out the Fridge Pasta

The past weekend, while grocery shopping, I found burrata for the first time. I've been looking for it for a while, so I was excited to try it. I knew for sure I wanted to make pasta with it, but didn't know which recipe to make until today. When I was looking at the fridge this morning, I saw a whole bunch of tomatoes, with some starting to get squishy. If they weren't used soon, they would become rotten. So, with this in mind, I knew what to make. I started off with roasting the tomatoes and onions, then blending it into a sauce. After that, I just sauteed garlic in olive oil, then added in the tomato sauce and seasoning. Finally, I added the cooked pasta and burrata to finish. The recipe does not have exact measurements, but it is easy to follow and quite delicious. It also is very adaptable, so make it how you like it. This recipe makes quite a lot of sauce, so it is perfect for feeding many people or a weekly meal prep. I enjoyed the pasta a lot, and I hope you do to.


Sauce Ingredients:

1 part onions

4 parts tomato

4 tbsp olive oil (divided)

5 cloves garlic (add more if you like)

salt to taste

pepper to taste

dried oregano to taste

dried basil to taste

1 ball burrata (optional)


Steps:

  1. Preheat oven to 425 Farenheit

  2. Cut your tomatoes and onions into large chunks and place onto sheet pan. Add 2 tbsp olive oil and salt and pepper to taste. Mix in with the tomatoes and onions. Place into oven for 35 minutes. Take out and blend until smooth.

  3. Mince your garlic very finely. Add remaining olive oil to cold pan and place onto medium high heat. Heat the pan until the oil begins to shimmer. Sautee the garlic until aroma comes out (around 30 seconds) then add your blended tomato sauce, as well as the oregano and basil. Let the sauce simmer for 10 minutes, or until thickened to your liking.

  4. Bring heavily salted water to a boil, and cook pasta according to package instructions. On the side, heat up your sauce. When the pasta finishes boiling, add it into the sauce as well as some pasta water. Continue stirring until the sauce thickens. Add in salt and pepper to tasta, then add the burrata. Mix until combined and creamy, then serve


Notes:

  • Add pasta water gradually to avoid a watery sauce
