15 Minute Zucchini

As the school year progresses, schedules get busier and busier. For many, getting homecooked meals on the dinner table everyday is only getting more difficult. But do not fear, this healthy zucchini recipe only requires 4 everyday ingredients. Its simple but delicious, and it is a perfect compliment to any meal.


Why This Recipe Works

  • Zucchini: A simple veggie that is difficult to ruin, what else can you ask for. Zucchini has a great subtle flavor that is perfect as a vessel for stronger ones like garlic. When cooked long enough, it becomes sweet and soft and just delicious.

  • Garlic: This is the biggest flavor component of this dish. It gives a slight spice and a great aroma to every bite.

The subtle flavoring of the zucchini and the slight sweetness of it make a perfect vessel for the punchy and flavorful garlic. Its a perfect pair is both healthy and delicious.


Zucchini Recipe

Servings 2-3:

Cook Time: 10 minutes

Total Time: 15 minutes

Ingredients:

  • 2 medium sized zucchinis

  • 4-5 cloves of garlic (finely chopped)

  • 1 tbsp olive oil (or any cooking oil)

  • 3/4 tsp salt

  • 1/2 tsp black pepper

Instructions:

  1. Clean your zucchini and cut off a small bit of each end. Cut each zucchini in half lengthwise, then cut the halves in half one more time. You should have 4 strips of zucchini per vegetable. Cut the strips into a 1/4 inch pieces.



  2. Heat a pan on medium high heat. Add in the olive oil and wait until the oil shimmers. Add the zucchini to the pan and coat each piece with oil by tossing in the pan. Add the salt and mix well, then leave the zucchini alone for 2 minutes and it picks up a nice brown color. Toss the zucchini again and don't touch for another two minutes. If you like zucchini to be softer, cook longer.

  3. Add in all of the garlic and cook for another 30 seconds to one minute or until you can smell the garlic fragrance. Add in the black pepper and more salt to taste. Plate and enjoy.
